Miso Maple Glazed Rainbow Carrots

These roasted carrots are sweet and savory, and packed with umami flavor. Try using parsnips, turnips or butternut squash if you wish.

  • 1 lb rainbow carrots (any carrots will work here)

  • 1 T olive oil

  • Kosher salt and black pepper

  • 2 T maple syrup

  • 2 T white or yellow miso

  • 1 T soy sauce

  • 1 T melted butter

  • 1 t garlic powder

  • Chopped parsley, for garnish

Preheat the oven to 400 and move the rack to the upper third of the oven. Line a sheet pan with foil. Toss carrots with olive oil and sprinkle with salt and pepper. Roast for 12 minutes.

Stir together the maple syrup, miso, soy sauce, butter, and garlic powder in a small bowl.

Remove carrots from the oven and baste with the glaze. Roast 10-15 minutes until glazed carrots have browned and caramelized in spots. Remove from the oven and let cool slightly.

Garnish with chopped parsley.
