Classic Margarita and Guacamole

Makes 1 cocktail
Classic Margarita
Use a good quality tequila and you won’t need to add sugar, other than the sweetness in the orange liqueur.
Salted rims
Lime wedges
Kosher salt
Cocktail
2 oz good-quality blanco tequila
1 oz Cointreau or triple sec, or any orange liqueur
11⁄2 oz fresh lime juice
Garnish: lime wheel
Salt the rims of the glasses by placing salt and on a plate. Wet rims of glasses by running a lime wedge around the edge. Roll rims through the salt. Set aside.
Fill a cocktail shaker halfway with ice. Add tequila, Cointreau, and lime juice and shake vigorously for 20 seconds. Strain into the prepared glass filled with fresh ice. Garnish with lime wheel.

Classic Guacamole
Delicious, nutritious, and vegan.
4 ripe avocados, peeled and seeded
1 small tomato, seeded and chopped
3 T minced red onion
1⁄2 jalapeno, minced (leave seeds in if you want more spice)
Juice from two limes
Zest from half a lime
1 garlic clove, minced or pressed
1 t kosher salt
1⁄2 t cumin
1⁄8 t cayenne (optional)
1⁄4 c loosely packed cilantro leaves, plus more for garnish
Kosher salt and black pepper
Mash the avocados with a fork. Stir in tomato, onion, lime juice and zest, garlic, salt, cumin, cayenne, and cilantro. Add a couple of grindings of black pepper. Taste for seasonings. Serve with chips or vegetable crudités.
